White snapper shiokoji yaki



I marinated white snapper in Japanese seasoning called "shiokoji" which makes the fish moist and very tasty.  Though it makes the fish very easy to be burned when it cooks.  I was careful but in the small moment I was looking something else, it burned...

I also made rice with fish head.  It's better to grill the head and boned in the oven before so fishy smell goes away.

「ホワイトスナッパーの塩麹焼き」焦げやすいので気をつけなければ、と思いながら焦がした料理。。しかし味は美味しかった。塩麹は魚が本当に美味しくなる。鯛のようなパサつきがちな身もしっとりするし、ちょうどいい旨味と塩味がつく。
