Shiokoji grilled yellow fish



This is one of my favorite fish in Singapore.  It' most and rich and very tasty.  I like to eat as this, marinate the fish in shiokoji first then oven bake it.  Shiokoji is Japanese seasoning; a mixture of Koji; which cames out of the process of making sake and salt.

I was lucky that day that one of the fish had fish raws inside.  This is a delicacy for me.  I have this with lemon juice and a small amount of soya sauce.

「黄魚(黄ぐち)の塩麹焼き」この魚は沿岸の中華圏の人には一般的な魚。日本ではあまり獲れないと思うが、香港や上海でもよくある大衆魚だ。身がしっとりしていて、かなり脂があり美味しい。

私は塩麹にしばらく漬けてオーブンで焼いて頂くのが好きだ。今回は1尾に子が入っていてラッキーだった。捨てずに綺麗に腹掃除をしてくれた魚屋のおじさんに感謝。レモンをたっぷり絞り、醤油をさっとふって頂く。
