Confit de Aji

Aji is popular and reasonable fish in Japan and they're available in Singapore as well.  I made confit with it.  With this way, I can keep it for a while.

「鯵のコンフィ」新鮮な鯵があったので、コンフィにして作り置きにした。日本で鯵の料理と言ったら、私は刺身しかしないが、シンガポールではよくコンフィを作る。応用が利くので便利だ。これは鮮度が良かったので、つみれ汁にしても良かった。
