Roleau de porc au tapnard



This is pork shoulder pounded and rolled with tapenade.  Tapenade is olive paste from south of France.  I cooked the meat with a lot of herb de provence.

「豚肩肉のタプナード巻」肩肉をたたいて開き、タプナード(オリーブのペースト)を塗って巻き、柔らかくなるまで煮込んだもの。ハーブドプロヴァンスをたっぷり入れた南仏風の料理。
