Shiokoji Yuzu shabu shabu Dinner





I went to buy Japanese pork at Mediya.  I hardly go there because it's expensive there but this is the place to buy good quality Sashimi and Japanese meat in Singapore.

I bought thinly sliced Japanese pork belly for Shabu shabu; which is a Japanese style of hot pot.  Kurobuta from Kagoshima is a special pork.  It's very important to cook a good quality meat for Shabu shabu because it's hardly a cooking but it's just a slice of meat boiled in broth.

Usually the broth for the shabu shabu is just water with Konbu but I seasoned it with Shiokoji, sake and light soya sauce this time since I didn't heat the pot on the table.  It was absolutely delicious.

「塩麹豚しゃぶ」明治屋で鹿児島の黒豚や柚子を見つけたので、しゃぶしゃぶをする事にした。しかし卓上しゃぶしゃぶは暑いので、味付け鍋にしてあらかじめ煮込んだ鍋をた。

鍋出汁は、昆布、塩麹、酒、白だし。これに、黒豚の薄切りバラ肉、豆腐、水菜、レタス、ねぎを炊いた。アクセントにゆずを散らしたら、感激の美味しさの鍋ができた。

ほぼ調理せずにこんなに美味しいものができる日本の食材は素晴らしい。ゴマだれは、練りゴマ、白だし、米酢、柑橘、出汁、砂糖、胡麻油を合わせた手作り。これはゴマだれを買い忘れた(私はポン酢派)ので、応急処置で作ったものだが、自分好みのゴマだれが出来て大満足。シメは棒ラーメン。
