Chicken cutlet with tomatoes


I found lovely red tomatoes from Japan called "Momotaro" the other day.  I usually make chicken cutlet with tomato sauce but I changed with fresh diced tomatoes this time.  You need to serve this dish quickly after frying the chicken to keep the crust crispy.

「トマトチキンカツ」日本食材を売っている店で美味しそうな桃太郎トマトを見つけたので、チキンカツのトッピングにしてみた。塩とオリーブオイルで味付けした。時間が経つとトマトの水分でカツの衣が柔らかくなるので、揚げたてにサッとかけて素早く頂く。
