Toriten Udon

Toriten means chicken tempura.  Chicken or any meat is not acceptable as Tempura ingredients in Japanese cooking.  Shrimp and certain white fish is allowed for a part of Tempura so Chicken is never served in Tempura bar.  Though this is a regional dish from Ohita where there are many chicken producers.  Udon and soba is alway tastes much better with tempura.

「鳥天うどん」鳥天は大分の郷土料理なので、私はあまり食べたことがないが、「丸亀うどん」にあったのを思い出して作ってみた。てんぷらの衣を薄めに作ったので、唐揚げのようになってしまった。
