I dared to visit the famous three-star restaurants this time.  L'amboise is known as their classical style of cuisine.  Their menu consists of only "a la cart", therefore I took two dishes,  entre and plate, thought the portion was too much for a woman.

Langoustine dish is one of their signature dishes. The cuisson was perfect that I've never tasted before.  The sauce had a pinch of curry favour.  I personally don't like curry flavour with good quality of food, but this combination was wonderful.

I was disappointed with Ris de veau for its sauce.  I regretted asking for the detail of the sauce since it was not really marked what kind of taste was it.  Ris de veau was good quality though the cut was too big and the sauce which has basque flavour; a hint of piment d'espelette with olives, but this is not exactly the perfect sauce for ris de veau to me.  I definitely prefer creamy sauce.

The dessert was perfect.  They strongly recommended us to take their signature "Gateau Chocolat".  The waiter proudly told us that this is the best Gateau Chocolat in Paris.  In fact, it really was the best cake I've ever had in my life.

Overall, I've found the dishes are a bit boring with no surprise except the dessert.  Do I conclude the price of 350 euro per person; with one glass of champagne, one bottle of wine worth it.  Yes for the experience but once is enough.

「ランボワジー」1988年から三ツ星をキープしているレストラン。お料理はメニューは無く、全てアラカルト。私はラングスティンとリ・ドゥ・ヴォーを頼んだ。

ラングスティン(手長海老)はこの店のシグネチャーの一つでかなり前からあるものだ。ラングスティンの火の通し方が完璧だった。これ以上ない仕上がりだ。ソースは若干のカレー風味。私は新鮮な素材にカレー風味を合わせる事はあまり好きではないが、大振りのラングスティンにはとても合っていた。

残念だったのが、リ・ドゥ・ヴォー(子牛の胸腺)の料理。これはフランス以外ではあまり食べられないので、ソースまで詳しく聞かずにオーダーしてしまった。バスク風味のオリーブのソースがこれじゃない感しかない。切り方も大きすぎる。

デザートはパリで一番美味しいガトーショコラだから絶対食べた方がいい、と薦められた。本当に今までで食べた中で一番美味しいデザートだった。

クラシカルなお料理の最高峰の一つだが、デザート以外は少し退屈な印象を受けた。
食前酒のシャンパンと二人でワインを1本とり、お会計は1人350ユーロ。この価値があるかと言えば、一度で十分だと思う。
