Nishime - Spring


Nishime is Japanese vegetables and Tofu products cooked in Dashi.  It usually contains only vegetables; without any chicken or meat stock so it's important to cook in good quality of Japanese stock from Konbu.

「春の煮しめ」春の季節野菜で作ったお煮しめ。わらびはアクが強いので、下茹でしてあるものを使い、別鍋で煮含めた。他は竹の子と蓮根を先にしっかりと煮て、その他の野菜は時間差で投入した。
