Dashi tofu


Dashi is a regional dish from Yamagata.  I've never had the real one but I just know from internet information.  I believe that it's made with minced cucumber, aubergine and thinly cut konbu.  I didn't made this one with aubergine but it was a great topping for tofu.

「豆腐のだしかけ」写真のだしとは出汁ではなく、山形の郷土料理。遠い土地のものなので、私もあまりよく知らないのだが、ケンミンショーやネットの情報で知った。細かく刻んだキュウリと茄子を粘り気のある刻み昆布と少量の醤油?で混ぜたもの。夏のご飯のお伴のようだが、ご飯に限らず豆腐やうどんのトッピングとしてとても美味しい。
