Aubergine with ground pork Pasta


Because I love aubergine I often make pasta with it in summer.  Aubergine can absorb lot of oil so I sauteed with olive oil and ground pork first then cooked with dashi.  Sauce is light soya sauce.

「茄子と豚挽肉のパスタ」私は茄子が好きで夏の間はよく使う野菜。茄子はオイルをたっぷり含ませると美味しいが重くなるので、始めオリーブオイルでソテーし、出汁を足して軽く煮込む。味付けは薄口醤油。
