Porc braise aux haricots rouges




I found these local haricots; string beans at Wanchai market in early May.  I go to the market once a week and found that they have strange looking beans so I tried one bunch.  It was so good that I have to buy them more in week later.

These are much better than normal "Haricot vert" from Africa.  It has good texture even you cook in stock for a while.  I cooked the beans in chicken stock with dice of tomato then braised with pork fillet.

「豚フィレと豆のブレゼ」これは豚肉より、今季節の豆が美味しい料理。最近よく行くワンチャイマーケットで、紫色の豆を見つけたので、興味で買ってみた。これがとても美味しくて、その翌週は3束買った。豆の甘みや旨味があり、食感がとてもよい。煮くずれないので、西洋料理にはとても合う。煮しめにしてもとても美味しいだろう。

これは一度茹でてアクを抜き、豚フィレ、トマトと一緒にブレゼ(蒸し煮)にしたもの。不思議なことに、濃い紫色は茹でると濃い緑に。
