Smoked Mackerel


It's a new trend in Japanese home cuisine that you make smoked foods at home.  It sounds very complicated and hard to believe that you can do in your kitchen rather than in outside BBQ but it's rather easy to do, if you have wood chips.

There are some tips to make good smoked foods but it's the best that you experiment all by you yourself.  This is made with salted Mackerel but it was not as good as I made the same one in Japan because of the quality of the fish.

「塩鯖のスモーク」これは桜のスモークチップを使って作ったスーモーク。日本で作ってとても美味しかったので、冷凍の塩鯖で作ってみた。しかし、鯖に脂が乗っていないのでいまいちだった。日本で作った時はとても美味しかったが、鯖自体の美味しさによるようだ。
