Shiokoji marinated chicken with Negishio


Shiokoji is one of the traditional Japanese seasoning and it recently became very popular in home cuisine.  Shiokoji itself is traditional seasoning but it used to marinate vegetables to make pickles to make marinated fish but it was only available for producers of those products.

Suddenly someone promoted Shiokoji as home cuisine seasoning about two years ago then it became a huge hit.  This is lightly marinated shiokoji chicken breast and steamed.  The sauce is made with minced leeks with Japanese kelp dashi, salt and sesame oil.

「鶏胸肉の塩麹蒸し、ネギ塩ダレ」これはネギ塩を極めた一品。私はネギ塩という味が好きなのだけど、いわゆる既製品の塩だれや、外食チェーン店などでありがちな化学調味料過多の味はあまり好きではない。少量の味の素を使っても、家庭で出来る自然で旨味の効いた塩ダレ味を探していた。白だしなどを使ってもなんだかいまいち。

うま味の鍵は濃い昆布出汁だった。平目の昆布締めには両面に昆布を使うので、その後は昆布出汁を持て余していた。昆布だしは、昆布のぬめりがあるので悪くなり易い。故に始めから大量に作らず、先ずは少量に濃く出し、それを薄めて料理の用途に応じて使ってた。その濃い出汁をベースに、塩、薄口醤油を合わせ、ネギのみじん切りを加えたら、驚くほど美味しいタレが出来た。

今回の濃い出汁は贅沢に昆布を使った結果だが、普通に昆布だしをとり、煮詰めて味を凝縮し、さらに少し昆布茶を加えると同じようなものが出来ると思う。塩麹に漬けた鶏胸肉をフワッと蒸し上げ、タレをかけ最後にごま油を少量たらす。
