Fish Thursday



Last Thursday when I went to Wanchai market, I found fish looked like Sardines but I was not really sure because the scale's color was tinted yellow so I thought it would be another sardine like fish called "Kohada" but they were actually sardines.  

Sardines are difficult fish to cook since they have micro small bones.  So I followed very much know recipe of Japanese cooking; Iwashi no fry.  I happened to fined Shiso herbs this day, I cooked together with the deep fry of the fish.

「鰯のフライ」先週の木曜のワンチャイ・マーケットで、鰯かこのしろか?と思う魚を買った。鱗が黄色ぽかったので、このしろのように見えたが鰯だった。小骨が鬱陶しいので、簡単にフライにしようと思った。

この日は丁度、赤紫蘇の葉を買ったので、一緒に合わせてフライにした。フライはサックっと揚がり、香りがたってとても美味しかった。小骨も全く気にならない。
