Fillet de porc, sauce aux prunes

This is a golden match; fillet of pork with plum sauce.  The sweetness and the slight sourness of the plum of this season match perfectly with lean pork fillet.

「豚フィレのすももソース」プラムは英語ですもものこと。少し前、８月がシーズンだと思う。香港のこの種類のフルーツは特にアメリカ（カルフォルニア）から輸入が主で、それらの輸出用フルーツは長期保存しているせいか、生で食べて美味しいものが少ない。そんなプラムも料理にはぴったり。
