Brochette de poulet


This is chicken thigh marinated in slices of onion and lemon.  This is middle eastern ways of making grilled meat and usually has to be made with lamb.  You have to use a lot of onion, one full onion slices for chicken thigh for two.  Press onions with one table spoon of salt then add lemon juice.

This marinade removes certain smell of the meat and make the meat tender.  That's why it's works very well with lamb but chicken thigh as well.  Marinate the meat couple of hours then skewers in sticks then grill in grill pan.  I like to eat this with pita bread.

「鶏もものブロシェット」これは鶏もも肉をタマネギとレモンのマリネに漬け込んだ中東や中央アジアで食べられる串焼き料理。本来はラム肉で作るもので、肉の臭みと消して柔らかくする為に大量のタマネギを使う。これは二人分でタマネギ大1個使用した。タマネギをスライスして塩大さじ1で揉み、レモン汁1個分を加えたものに肉を漬け込む。2、3時間漬け込み、串にさしてグリルパンで焼く。生野菜とピタパンを付け合わせて頂くとよい。
