Aji no Karaage








This is one of Japanese style of deep fries served with Daikon radish with Ponzu sauce.  "Karaagea" is saya sauce, sake, mirin marinated ingredients deep dried with corn starch.  Ponzu sauce is mix of Japanese citrus, dashi and soya sauce.  You can buy already made ones but you can also make with lemon juice and soya sauce.

「鯵の唐揚げ」大振りの冷凍鯵は塩焼きするには脂が少ないので唐揚げにした。よく鯖は大振り、鯵は小振りが美味しいと言われるが全くその通りだと思う。軽く酒、醤油、少量の味醂で味付けして片栗粉をまぶしてサッと揚げた。これには大根おろしにポン酢がいい。
