Gratin de Pommes de terre au comté


I made this out of leftovers of two dishes.  I had potato and bacon saute (similar to hash brown) with thyme leftover and confit of onions (slow cooked saute of onion) from tartlet from different days.  I lay them in casserole with cherry tomatoes and cubes of comte cheese then cooked in the oven for 20 minutes.  Nutty flavor of comte cheese made the ordinary ingredients of gratin to a very special dish.

If you cook this from the beginning, I think it's still better to saute potatoes in the pan before.  You may put everything uncooked together in the oven, but it's better to cooke the potatoes with over then add tomatoes later.  Onions has to be sauted separately because raw onions and confit of onions are not the same thing.

「ポテトとコンテチーズのオーブン焼き」これは残りもの2皿をアレンジして作ったもの。2日前程に作ったポテトとベーコンのタイム風味のソテーしたものと、オニオンタルトの残りの飴色に炒めたタマネギをキャセロールに敷いた。それにプチトマトとコンテチーズを1cm角のキューブに切ってアレンジし、オーブンで20分程焼いた。

ポテト、ベーコン、トマトの組み合わせはつまらないが、コンテチーズのナッツのようなフレーバーが上手く生かされて、一気にスペシャルな料理になった。今回私は残りもので作ったので手間がかからなかったが、初めから作る時もやはりジャガイモとベーコンはフライパンでソテーした方がよいと思う。ジャガイモはオーブンで火を通すのはとても時間がかかるし、アルミフォイルをしなければ乾燥するだろう。トマトも一緒に入れたらトマトがぐちゃぐちゃに煮崩れる可能性がある。タマネギソテーは別に飴色になるまで丁寧に炒める必要がある。
