Asparagus no Shiraae


Season of Asparagus has come.  "Shiraae" is a traditional Japanese dish which is the combinations of boiled vegetables and mashed tofu with miso.  It usually has several ingredients but I made only with Asparagus this time.  It's very important not to over boil the vegetables in Japanese cooking.

「アスパラガスの白和え」アスパラが美味しい季節になったのでアスパラのみの白和えを作った。木綿豆腐を水を切ってフードプロセッサーで挽き、味噌、砂糖、酒を加えたもの。アスパラは食感と野菜の水分を楽しむためにサッと茹でる。出来たら直ぐに食べる。
