Lettuce with sesame sauce









In traditional Japanese cooking, vegetables are hardly sauteed with oil but we blanch them in boiling water first then marinade with Dashi stock or a variety of sauces.  This is blanched lettuce with sesame sauce.  This lettuce is Chinese lettuce and they are quite hard so it's good to use as blanched.  Sesame sauce is already made one for "shabu shabu" and I added a small amount of rice vinegar to it.

「中国レタスの胡麻酢和え」中国のレタスは炒め物用で固く歯ごたえがあるので、サッと茹でて使うと和え物にちょうどいい。ソースはしゃぶしゃぶ用のゴマだれに米酢を少し足したもの。和え物は食べる直前に和えなければ色が悪くなったり、野菜の汁が出て水っぽくなるので、このように盛付けると時間が経ってもそれほど影響がない。
