Kaki no Shabu-shabu salade










"Kaki" is East Asian fruits and there are many in Japan.  The fruits is seasonal of this time, around November.  It has certain sweetness but also has strong tannin.  With recent bio technology, the tannin has lessen.  Because of this special taste, I think it goes very well as salad.

"Shabu Shabu salade" is salad with boiled thin sliced meat, pork or beef.  I used baby spinach and sesame sauce for the dressing.  This whole combination of kaki, pork, baby spinach with sesame goes very well together.

「柿のしゃぶしゃぶサラダ」ベビーほうれん草と豚しゃぶに「柿」を加えた。柿の軽い渋みと甘みがゴマだれの豚しゃぶサラダに最高によく合う。

ところで、最近の日本の柿は随分昔と変わったと思う。形は真四角、種無しで渋みもまろやか。美味しいのだけど、もう少し野生的な味を残してくれてもいいと思う。一方で過去に美味しそうな柿を香港のローカル市場で見つけて買ってみたが、これは渋すぎて食べられなかった。
