Pumpkins

Halloween is coming.  Halloween is an American festival, I don't think people in Asia matter this much.  Because I lived in the U.S. for almost a decade, this season reminds me of the Pumpkins of Halloween.  I like this festival because it's fun.  Many Americans are very passionate about dressing up in costumes for this festival.

Above is "Pumpkin potage" and the bottom is "Pure of Pumpkin".  I like using Japanese pumpkins for these dishes.

私はアメリカに９年住んでいたこともあって、１０月末はハロウィーンの「カボチャ」を思い出す。ハロウィーンはアメリカ独特のもので子供はお菓子集め、大人は仮装で気合いを入れるとにかくアメリカ的で楽しい祭りだ。ニューヨークではダウンダウンのロウワーウェストのハロウィーンパレードが一大イベント。

彼らはこの時期「パンプキンパイ」を焼いたりするが、アメリカのカボチャがあまり美味しくないので、これがあまり頂けない。カボチャが世界一美味しいのは日本のもの。そのもの自体が美味しいのであまり手を加えずにして頂くのがベストだと思う。

上の写真はソテーしたタマネギとカボチャをコンソメで煮て、ブレンダーにかけたポタージュ。下はマッシュしたカボチャにクリームを合わせて、チーズをかけて焼いた肉料理の付け合わせ。
