Creme Caramel













"Creme Caramel" is very popular dessert in Japan.  My mother used to make this for my family very often when we were young.  I think everyone has their own way to make this desserts.  Also there are many patisseries in Japan make this so you can buy good ones easily.

Creme Caramel is simple desert.  There are only four ingredients, eggs, milk, sugar and vanilla.  However I believe it requires some experiences to make it well.  First finding the golden portion of those ingredients is not easy.  Also finding the right cooking time is difficult.  Since it's very sensitive to the temperature, you have to pay very close attention when it's in the oven.  You can never over cook the Creme caramel, hard one is terrible.

「プリン」はシンプルだけに奥が深いと思う。卵、牛乳、砂糖とバニラだけで作れるのでよく作るが自分の理想に落ち着くまでにかなりの時間がかかった。日本人はプリンとの関わりが深い故、クリーミータイプや昔風など好みが別れるような気がする。

プリンは焼き方が難しい。焼き過ぎて固くなったら最悪だ。温度に非常に敏感なので、料理本に書いてある設定温度を鵜呑みにしてはいけない。なぜなら全てのオーブンは温度と火の入り方が違う。特に自分のオーブンでなかったり、使い慣れていない物では注意が必要だ。
