Cote de Boeuf



It takes years of practice to cook a perfect steak.  Cooking meat is one of the most difficult part of cuisine.  There are some basic techniques to understand how the meat is consisted and what's the best way to eat, but in the end it's love that counts.  You have to love meat to cook meat.  Well treated cows become good beef, and you have to cook them with lot of love and care.

私は未熟者だが、肉を上手に焼けるようになるのには何年もの修行が要る。肉は焼く度に学ぶ事がある。肉の状態は牛、部位、鮮度で違う。だから先ずはよく観察して触って感触を見る。基本的なテクニックを身につけることは非常に大切だが、最後はやっぱり愛情かな、と思う。肉に対する愛情と真剣さをもって優しく焼き上げること。
